The earpiece worn from the first to the last service, logged each night by the box. A tool left in a drawer counts as a failure.
Team satisfaction
Weekly interviews at the bar, on the floor and in the kitchen throughout the pilot. Sentiment is documented, not assumed.
90-day retention
The teams that stay, in a trade where turnover is the plague. It's the metric owners look at first.
Incidents avoided
Allergies intercepted, misses caught, cues passed on: logged throughout service, to quantify the losses avoided in euros.

Where it stands the build
The audio loop
Listening, understanding, delivery: validated in testing across 82 scenarios. Internal QA: the market will decide at the pilot.
Finalisation
About four months of testing and fixes before the laboratory pilot is installed, planned before end of 2026.
Floor vision
The pacing camera is developed separately. It is not required for core operation.
Interoperability with existing POS and reservation software is an explicit line item of the round.
